HEALTHY AND TASTY RECIPES FROM SRILANKA with less oil which are easy to make.

SPICY BAKED SALMON

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste.

METHOD

Wash the salmon and cut the salmon into 1 1/2" cubes. Cut the garlic in very small pieces. Mix all ingredients except butter and water. Add the butter last and mix it so it coats the salmon and prick the salmon on both sides with a fork so that the spices/butter would soak in. At the end put the water around the fish and bake in a tin at 400 degrees Fahrenheit. Salmon purchased at Costco to be baked for 40 minutes. Other salmon maybe baked for less time until well cooked.

BEETROOT SALAD

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste.

  • 1 large beetroot
  • 1/4 teaspoon salt
  • 1/4 Onion
  • 1 teaspoon lime or lemon
  • 1/4 teaspoon pepper

METHOD

Wash and cut the beetroot into five pieces. In a pan add water so the beetroot is covered. Boil for thirty minutes. Drain the water and peel the skin of the beetroot. Dice it and mix the onion, salt, pepper and lime juice with it. The dish is ready now.

TOMATO RASAM

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste. This is a good remedy for colds and coughs as well as a tasty side dish for rice.

  • 1 Ripe Tomato
  • 1 3/4 cups Water
  • 1/4 Onion
  • 3 cloves Garlic
  • 1/4 inch Ginger
  • 3/4 teaspoon salt
  • 1 table spoon coriander powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cummin
  • 1/4 teaspoon mustard seeds
  • 2 tablespoons oil

METHOD

Combine oil, onions, mustard seeds and tomato and saute them in a saucepan. Add a little water and cook till tomato is soft. Mash tomato with spoon. Add the rest of the water, salt, coriander powder and cumin and bring to a boil. Lastly add ginger, garlic and pepper and boil again for two minutes. Your dish is ready now.

EGG OMELETTE

INGREDIENTS:

  • 5 Eggs
  • 1/4 Onion
  • 4 table spoons oil
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 2 teaspoons Chilli powder mixed with masala powder or chilli powder mixed with coriander powder

METHOD

Ina saucepan break the eggs and whip them with the chilli/coriander powder and salt. Add the milk and whip until mixture is smooth. Add some oil in a frying pan and the onions and fry till onions are slightly brown. Add the egg mixture in and cover with a lid. When the bottom of the mixture is fairly cooked flip the egg mixture to the other side and cook till it is brown at the bottom. Turn the egg mixture again and cook until both sides are brown. The dish is ready now.

BRUSSELS SPROUTS

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste.

  • 15 Brussels Sprouts
  • 2 table spoons oil
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon cummin
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1/2 cup water
  • 1/2 onion sliced
  • 2 pieces (cloves) garlic sliced
  • 3 table spoons grated/desiccated coconut

METHOD

Cut off the stems and wash the Brussels Sprouts. Cut the brussels sprouts into 1/2 inch pieces. Put the oil in a saucepan and add the sprouts. Cook for a minute and add all the other ingredients except the coconut and the cummin and cook in medium heat until the sprouts are cooked. Add additional water if it seems the sprouts are being browned. While on the stove separate the sprout leaves with a spoon and add the coconut and cummin at the end and cook for three minutes. Remove from stove. Your dish is ready now.

MASALA CAPSICUM CURRY

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste.

  • 6 Capsicums
  • 1 Tomato
  • 1/2 Onion
  • 2 table spoons oil
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon fenugreek
  • Chilli powder mixed with masala powder 1 table spoon

METHOD

Remove the stems by cutting the capsicum and then cut the capsicum length-wise four times and remove the seeds fully. Wash them and cut them further into 1/2 inch pieces. Dice the tomatoes and cut the onions. In a saucepan add the oil, capsicums, tomatoes, onions, salt, fenugreek and saute for one minute. Then add the water and cook until vegetables are soft. Mash the tomatoes with a spoon and serve in a dish.

PUMPKIN CURRY

INGREDIENTS:

Quantities of ingredients recommended can be changed according to taste.

  • 250 gms Peeled Pumpkin
  • 1 1/2 cups Water
  • 1/4 Onion
  • 2 cloves Garlic
  • 1/2 teaspoon salt
  • 1 spoon chilli and masala powder mixture
  • 2 table spoons coconut powder
  • 1/4 teaspoon cumin
  • 3/4 teaspoon tamarind paste

METHOD

Combine pumpkin, water, onions, garlic, salt and chilli and masala powder in a saucepan. Cook on high stove for eight minutes until pumpkin is soft. Add remaining ingredients i.e coconut powder, cummin and tamarind paste and cook for two minutes. Add a little water if pumpkin is browning and cook. Your dish is ready now.

MASALA EGG CURRY

INGREDIENTS:

  • 5 Eggs
  • 1/4 Onion
  • 2 table spoons oil
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon cumin
  • 2 table spoons Chilli powder mixed with masala powder/coriander powder
  • 3/4 teaspoons tamarind paste

METHOD

Boil the eggs and remove shells. In a saucepan add the oil, onions and cummin and fry till slightly brown. Add the milk, chilli masala powder and salt and bring to a boil. Lastly add the eggs and tamarind paste and boil for another two minutes. The dish is ready now.
